If you are craving for a cake that is egg-less and tasty at the same time then the mouthwatering Cucumber Cake is perfect for you!
Ingredients Required (Approx. 10 servings): 3 cup semolina, 1/2 cup grated coconut, 1/2 teaspoon cumin powder, 1 teaspoon refined oil, 1/4 cup coconut milk, 3 cup powdered jaggery, 4 cup crushed cucumber, 5 tablespoon cashews, 8 powdered green cardamom, 2 cup cucumber juice
Step 1
To make this tasty egg-less cake, place a pan over medium flame and add semolina in it. Roast it for 10-15 minutes until it is brown. Keep it aside for a while and in a medium bowl, add crushed cucumber, cucumber juice, roasted semolina, grated coconut and the powdered jaggery. Mix all them together properly.

Now, add cumin, cashew and green cardamom powder to the mixture and whisk it smoothly. Make sure the batter is smooth and lump free, add coconut milk for the best results.
Step 3
Now, take a pan and grease its base with the coconut oil. Add the cucumber batter evenly to the pan and press firmly. Then, insert the pan into a steamer with the desired amount of water and cover with lid. Steam for about 20-30 minutes. Remove the cake from the steamer and keep aside for cooling. Cut into small squared pieces and enjoy with a cup tea or coffee!
