How to make Lentil Soup?

This nutritious lentil soup recipe is perfect for when you want to add some freshness to your meals or just curl up with a hot cup of soup! It's one of my favorite recipes ever, and I hope it ends up becoming a mainstay in your kitchen too.

It is quite simple to prepare without the need to go to the market because it is created using basic cupboard staples like dried lentils, bottled tomatoes, onions, garlic, and spices. It freezes beautifully and only takes about 30 minutes to prepare, so you can eat it any night of the week.. It's deep and cozy with coconut milk, freshly chopped ginger, and curry powder, yet it still feels light and fresh with a generous squeeze of lime juice.

Lentil Soup Recipe

Ingredients:

  • 1 cup of dried, cleaned and squeezed greenish or brown lentils.
  • 1 large onion, finely chopped,
  • 2 carrots, diced,
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika (optional)
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)
  • Lemon wedges for serving

Instruction:

This dish is easier than you may expect for such a tasty curry lentil soup. Cook the onions for a few minutes on medium heat before adding the ginger, garlic, curry powder, and red pepper flakes. Then add the sea salt, freshly ground black pepper, tomatoes, lentils, water, and coconut milk. Toss in the chopped cilantro squeeze in a good amount of lime, and cook while the lentils are cooked, about 25 minutes.

Enjoy this lentil soup alongside some delicious crusty bread, a big salad, or some avocado toast with a dash of lemon. A side dish of vegetables, such as baked sweet potatoes, roasted cauliflower, or broccoli, would go well with it. You may freeze leftovers for up to an entire month or keep them in the refrigerator for a maximum of four days!
