What is the one thing that Indian parents can never understand?

There's nothing that they can not understand. But the domination of patriarchal and conservative mentality in society is so high that we can't make them understand a few things even if we expect them to.
Well, if you want to know only one thing then that is maybe a need for privacy. Hehe...
