I’ve seen this debate while helping set up a small food outlet. Gas cooking is generally cheaper upfront and works well for high-heat cooking. However, induction is more energy-efficient and safer in the long run. The choice depends on usage.
For heavy, continuous cooking, gas might still be more practical. But for controlled cooking and energy savings, induction can be better. Maintenance and safety also matter: induction reduces fire risks. In our case, a combination of both worked best. So instead of choosing one blindly, it’s better to evaluate your cooking needs and long-term costs.
