Dosa is famous south indian dish made from rice and urad dal.Rice and urad dal are soaked separately for 6-8 hrs and then grind into fine paste.The ratio of rice to urad dal is 3:1. Add 1 tspoon of Fenugreek seeds with the urad dal while soaking ,this gives a slight bitter flavour and also makes the batter more soft and frothy. Grind rice and urad dal separately for better results.Batter is fermented overnight and dosa is prepared in the morning.Masala dosa, rava dosa, ghee roast dosa, neer dosa are the different variety of dosa.Dosa is normally served with coconut chutney and sambar.

Ingredients:

- 1 cup rice
- 1/2 cup urad dal (white lentils)
- 1 tablespoon fenugreek seeds
- Salt to taste

Instructions:

1. Begin by soaking the rice, urad dal, and fenugreek seeds in water overnight.
2. After soaking, drain the water and grind the mixture in a blender until it forms a smooth batter.
3. Incorporate salt to your taste and ensure it is well mixed.
4. Transfer the batter to a spacious bowl and allow it to ferment for 8-12 hours, or overnight.
5. Once fermentation is complete, stir the batter thoroughly and add a touch of water if necessary to achieve a pouring consistency.
6. Preheat a dosa pan or tawa over medium heat.
7. Grease the pan with either oil or butter.
8. Pour a ladle full of batter onto the pan and spread it out evenly to form a thin crepe.
9. Cook the dosa for 1-2 minutes on each side, or until it turns a golden brown and is thoroughly cooked.
10. Serve the dosa hot with your preferred chutney and sambar.

Dosa is one of the famous dish of south Indian. The ingredients include are 2 cups rice, rinsed, /2 cup urad dhal, rinsed, 1/2 tsp fenugreek seeds, Filtered water, and 1 tsp salt. It starts with making a batter that includes soaking of rice, urad dal, and fenugreek seeds. Then Grind the urad dhal and fenugreek and rice too. Combine the rice batter and the urad dhal. leave it to ferment and check it after time to time. Lastly, spread the batter on to the pan and then fill the dosa if desired. After it cooks, it will be ready.

Firstly make the batter, first the urad dal and rice are soaked in water for 4 to 5 hours.Then both the rice batter and the urad dal batter are mixed with salt in a wide bowl or pan. This batter is then allowed to ferment overnight.After the batter is fermented, it increases in volume, has a pleasant fermented aroma and a slightly sour taste. A well-fermented batter makes the best dosa. Preheat a nonstick pan or tawa over medium heat.Then grease the pan with oil.Pour a ladle full of batter onto the pan and spread it evenly on all over the pan.Wait for 1-2 minutes,turn one side when it turns to golden brown.cook both sides and serve it with sambar and coconut chutney.
