The way gelato and ice cream are made separates one’s texture and smoothness vs. the other.

The ingredients of mustard are mixed and cooked to formcustard. That custard is cooled and churned at a high speed. This helps it incorporate more air, which then increases its volume. It’s then served cold; this maintains its hard texture and cream-touch.

On the other hand, gelato is made through the same process, only with minor differences.

The ingredients are mixed and cooked to form custard. Butthe mixture includes more quantity of milk and less proportion of cream and eggs. This affects its fluidity. Then gelato is churned at a much slower pace, which ensures it doesn’t incorporate as much air as ice cream. This also makes gelato much denser. Following, gelato is served in little warmer temperature, which keeps its texture smoother and softer.

This is why and how gelato and ice cream are different in appearance.
