Making a homemade sponge cake is easier than you might think. Start by combining sugar and olive oil. Use a whisk to blend them until the mixture becomes light and fluffy. Then, add the beaten eggs and blend well. Continue beating until the mixture turns white and creamy.
Next, mix the all-purpose flour and baking soda together. This ensures that the baking soda is evenly distributed in the flour. Gradually add this mixture to the egg mixture. Add a little milk (check the batter's consistency) and mix until the batter becomes fluffy and soft. Then, add vanilla essence and blend well. Vanilla essence is important for giving the cake a delicious flavor.
Now, take a baking tin to bake the cake and grease it well with some olive oil. Sprinkle some Maida or all-purpose flour on it to prevent the cake from sticking to the base. Pour the prepared cake batter into the tin and place it on a stand in a pressure cooker. Make sure not to add water to the cooker and ensure that the tin doesn't touch the base of the cooker. Remove the whistle and cook on low flame for 35-40 minutes. If you are using an electric oven, bake at 180 degrees for 30-35 minutes. Check if the cake is ready before taking it out.
