Chicken Masala adds an extra flavor to your dish, be it butter chicken, afghani chicken, or any other type of chicken.
Preparing this masala at home is very easy. Here’s how.
Ingredients:
• Coriander seeds: ½ Cup
• Fennel:1 tablespoon
• Cumin: 2 tablespoons
• Black Cumin: 1 tablespoon
• Black pepper: ½ tablespoon
• Fenugreek seeds: ½ tablespoon
• Red chili: 5
• Curry leaves: 20-25 leaves
Method:
• Heat a pan on high flame.
• Roast curry leaves in the pan till they become crispy. Take it out.
• Now roast red chili likewise, and take it out as well.
• Now put coriander seeds, fennel, cumin, black cumin, black pepper, and fenugreek seedsin the pan, and roast them till an aroma starts emerging.
• Let all the spices cool down.
• Grind all the spices in a mixer.
• Keep the chicken masala in an air tight container so that it can last long.

Ingredients
- 500 g chicken with bone
- 2 tbsp oil
- 1 medium onion finely chopped
- 1 tbsp ginger-garlic paste
- ½ tsp turmeric powder
- 2 tbsp red chili powder or to taste
- 1 tbsp coriander powder
- 1 tsp garam masala
- Salt to taste
- 1 –2 green chilies slit
- 2 medium tomatoes chopped or blended
- ~300 ml water
- Fresh coriander leaves chopped
- Lemon wedges optional

Method: Preparation Breakdown
Step 1: Sauté Base
- Heat oil; sauté chopped onion till golden.
- Add ginger‑garlic paste; cook till raw smell disappears.
Step 2: Spice Time
- Stir in turmeric, chili powder, coriander powder and salt—cook briefly to bloom spices.
Step 3: Chicken Addition
- Add chicken pieces; sauté till lightly seared.
Step 4: Tomato & Simmer
- Pour in tomatoes; cook till oil separates.
- Add water, green chilies; simmer covered ~20 minutes till chicken is cooked and gravy thickens.
Step 5: Finish with Flavor
- Sprinkle garam masala; stir gently.
- Garnish with chopped coriander.
